Do you find yourself skipping breakfast on a regular basis? They say that breakfast is the most important meal of the day, but it can be difficult to fit breakfast into busy schedules! I frequently skip breakfast because I don’t have the time to make it in the morning, and I don’t have the motivation to prep oatmeal or other meals before I go to sleep at night. One way that I’ve tried to combat this is by making big batches of muffins. Muffins can be easily made in large batches and can be frozen if you make a large enough batch. Usually, I only make one batch of a recipe and eat two or three muffins a day. They are gone within a week! However, sometimes I make larger batches and have to freeze some of them. Frozen muffins are almost as convenient as fresh ones – all you have to do is pop it in the microwave for 30-60 seconds! It’s always good to mix it up every once in a while, otherwise, it is likely you will get sick and tired of a certain flavor of muffin. Therefore, I give you 5 scrumptious muffins to try out for breakfast!
This muffin is one of my favorites, so it gets the number one spot on my list! My dad loves orange chocolate chip muffins, and my mom made these on special occasions as I was growing up. (She would wake up super early on these mornings just to make these muffins from scratch, which is very impressive). I am a sucker for anything with chocolate in it, so it is not surprising that I ended up loving these muffins too! Check back later this week for the recipe!
These muffins also have nostalgic connotations for me. When I was young, my dad and I would walk down to our local coffee shop. They had amazingly delicious lemon poppy seed muffins there, and these quickly became one of my favorite types of muffins. I love eating fruit-based muffins (if you couldn’t tell by now) because I can tell myself that they are actually healthy for me. Apple cinnamon muffins are delicious, and an apple a day keeps the doctor away, right? These muffins are great all year, but they are particularly comforting freshly baked (or freshly microwaved) on fall mornings. I really like eating bananas or banana-containing foods after working out. I don’t know if that’s just because a lot of post-workout foods are banana related? Regardless, I love to munch on these banana crumb muffins as a quick post-run snack. They tide me over so I can shower before preparing dinner. I feel like blueberry muffins are one of the most prevalent muffins around. I don’t really understand the hype around blueberry muffins. They are definitely not my favorite, but I didn’t feel like I couldn’t make a list of muffins without including blueberry! They are still good (anything with flour and sugar and butter is good), and hopefully people who love blueberry muffins will enjoy this delicious and easy vegan recipe!

It really is super convenient to make a batch or two on the weekend because then you have a quick easy snack for the rest of the week!
