Apple Cinnamon Muffins

These muffins were a huge hit with my roommates when I made them this week!  The small chunks of apple inside the muffin add moisture and flavor, and the streusel is a really nice topping to add some crunch and sweetness.  These muffins would be great in the fall, but they are just as great any other time of the year!

Apple Cinnamon Muffins

Yield: 6 muffins


1 1/2 cups flour

3/4 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/3 cup vegetable oil

1 egg

1/3 cup almond milk

2 apples (peeled, cored, and chopped)

1/4 cup white sugar

1/4 cup flour

1/4 cup cold butter, cubed

1 teaspoon ground cinnamon


  1. Preheat oven to 400°F. Line 6 muffin cups with paper liners.
  2. Stir together first five ingredients (dry).  Stir in oil, egg and milk. Fold in apples.  Portion batter into muffin cups (I used about 1/4 cup measurement for each muffin).
  3. Stir together sugar, flour, butter, and cinnamon (last 4 ingredients) in a small bowl.  Mix with a fork until it resembles cornmeal (unless you have no patience, like me, and then just mix it a little bit).  Sprinkle over unbaked muffins.
  4. Bake for 20-25 minutes.
