Banana Breakfast Muffins

These muffins are very good breakfast muffins.  I feel like anything with banana in it makes a good breakfast item, ammiright?  Unfortunately, I made these muffins with pretty unripe bananas.  Definitely try to make them with extremely ripened bananas – it will enhance the banana flavor and make them sweeter!  But the ones made with the unripe bananas were still quite good.  If you don’t have any old bananas lying around, greener ones will work in a pinch!

Banana Muffins

Yield: about 10 muffins

Ingredients

1 1/2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3 bananas (mashed)

3/4 cup granulated sugar

1 egg (beaten)

1/3 cup melted butter

1/3 cup packed brown sugar

2 tablespoons all-purpose flour

1/8 teaspoon ground cinnamon

1 tablespoon butter

Directions

  1. Preheat oven to 375°F.  Line muffin cups with paper liners.
  2. Mix together first four ingredients (dry). In a separate bowl beat together bananas, sugar, egg, and melted butter.  Stir banana mixture into flour mixture until just moist.  Portion batter into prepared cups (I used about 1/4 cup measurement for each muffin).
  3. In a small bowl, mix last four ingredients (cut the butter into the mixture so that it resembles coarse cornmeal – or, if you’re lazy like me, cut it into big chunks and call it a day).  Sprinkle over muffins
  4. Bake 18-20 minutes.

I really hope to make these muffins again with ripened bananas!  I think it will make all of the difference.  I also would love to add nuts to this and make banana nut muffins.  Yummmm.  Check out the original recipe for more info.
