Scrumptious Lemon Poppyseed Muffins

Lemon poppyseed muffins are one of my favorite types of muffins ever.  They’re so… lemony!  And delicious!  Yummmm.  My sister Emma and I work in the university bakery, and every morning our mouths water as we make 120 lemon poppyseed muffins.  I had to find out how to make them for myself so that I could satisfy the craving whenever it struck!  Here is my favorite recipe that I have found so far.

Lemon Poppyseed Muffins

Yield: about 10 muffins


1 1/2 cups flour


2 teaspoons poppy seeds

1/2 teaspoon baking powder

1/2 teaspoon baking soda

2/3 cup sugar

1/3 cup melted butter


2 eggs (beaten)

2/3 cup sour cream

3/4 teaspoon vanilla extract

1/2 teaspoon lemon peel

1/4 teaspoon lemon extract


  1. Preheat oven to 350°F.  Line 10 muffin cups with paper lines.
  2. Mix together dry ingredients.
  3. Cream sugar and butter.  Add the eggs one at a time.
  4. Stir in sour cream, vanilla, lemon peel, and lemon extract into sugar mixture.  Add flour mixture and stir until just moistened.  Spoon batter into paper liners (I used about 1/4 cup measurement).
  5. Bake about 15 minutes

I am so excited that I can finally make myself lemon poppy seed muffins from scratch!  I can’t wait to start experimenting 🙂  I used this recipe originally.
