Hello everyone, I am back to writing. The past few months have been crazy busy, and I let my blog slide down to the bottom of my priorities list. Can you believe it’s been two months since I posted anything? Eek, I apologize!!!!
Well, I’m excited to finally post this recipe mashup from one of our very early Sunday Dinners this summer. Nearly every Sunday, my family and friends in Cincinnati get together and have “Sunday Dinner”. Sunday Dinner is one of my favorite family traditions, and it was the inspiration for my Columbus Thursday Dinners. A few weeks ago I hosted Sunday Dinner and made these steak tacos.

I was debating about what I wanted to make all week, but I knew that my mom wanted me to use up one of the beef cuts we had in the freezer. When I found a Guy Fieri recipe for Grilled Tequila Garlic Lime Flank Steak I had my inspiration. I modified the recipe for the steak a little, and used some of the steak that we had in the freezer.
I ended up inviting everyone I could think of, so instead of an 8-10 person group we had an 18 person group. Mom had the foresight to buy a frozen pizza just in case we ran out of food (which we did). But tacos made the perfect meal for that many people! I chopped all of the toppings ahead of time (like onions, peppers, tomatoes, etc), I made guacamole, and then when it was almost time to eat I sent my dad and Deijohn out to the grill to cook the steak. (I never really understood how they could cook on the charcoal grill that we had. But we have since bought a gas grill and I am super excited to use it!).
This was a delicious and easy meal to make for a large group of people! Here is the recipe I used for the steak (tweaked from the Food Network recipe above). The toppings I used were: cilantro, guacamole (my own recipe below), sour cream, salsa, tomatoes, green onions, jalapeño peppers, cheese, diced sweet onion, and pickled red onion. I also made black beans and rice for vegetarians and for anyone who wanted a burrito!

An easy and delicious meal for a group!
Combine all steak marinade ingredients in a large tupperware or resealable plastic bag.
Let sit in the refrigerator 2 hours
Let sit at room temperature for half an hour
Cook the steak on the grill (for more detailed instructions you'll have to refer to the original recipe. Cooking steak on the grill is not my area of expertise... yet)
Very simple recipe for a delicious dip
Smush the avocados. Combine all ingredients. Mix thoroughly with fork until creamy. Make sure to taste test and tweak as needed
